It is the classic place to be from morning to night as a comfortable lounge and for enjoying the Waldorf Astoria Edinburgh's luxury afternoon tea.
To tell the story of the Caledonian Hotel through the Peacock Alley blend, we first needed to look at the history of the Caledonian Hotel itself. The building was part of the Princes Street Train Station - the Edinburgh terminus for the Caledonian Railway. The Caledonian Railway was established on the back of the Monklands "coal lines" that transported coal from the Monklands coal fields to Glasgow in Scotland before expanding to carry other goods from places such as Leith docks and a thriving passenger service.
To tell the story of the Caledonian Hotel through the Peacock Alley blend, we first needed to look at the history of the Caledonian Hotel itself. The building was part of the Princes Street Train Station - the Edinburgh terminus for the Caledonian Railway. The Caledonian Railway was established on the back of the Monklands "coal lines" that transported coal from the Monklands coal fields to Glasgow in Scotland before expanding to carry other goods from places such as Leith docks and a thriving passenger service.
We wanted to have a Scottish element, while also maintaining a link back to the Caledonian Railway.
The base tea is a combination of Chinese and Ceylon (Sri Lankan) black teas with little roasted oolong and Lapsang Souchong. The tea is then complimented with rose petals and blue cornflower with the cornflowers evoking the Saltire. It is finished with real single malt Scotch whisky and a little bergamot.
We chose Ceylon tea because the modern Sri Lankan tea industry was established by a Scottish man called James Taylor in 1867. In 2017 the Caledonian Hotel hosted a special celebration with representatives of the Sri Lankan tea industry for the 150th anniversary of James Taylor's achievement.
The Lapsang Souchong and roasted oolong teas bring a smokiness to the blend and are reminiscent of the coal that would been transported by the original Scottish railways.
The Peacock Alley blend was the first of our blends to contain real single malt Scotch whisky. It is very likely that whisky would have been transported at some point on the Caledonian Railway. The whisky is blended with a little bergamot oil and added to the tea.
This blend is exclusive to the Waldorf Astoria in Edinburgh and can only be found in the Peacock Alley where you can also purchase caddies to take home.
